The tide has rolled in.
I’ve had enough people bitching about the having to register to leave comments, so i’m going to make it so anyone can comment. Hopefully this doesn’t bite me in the ass, I don’t like spam bots.
I have cramps. It sucks pretty bad. I slept through the worst of them this afternoon, but a milder version came back. I also exceeded my upload limit for this month on Flickr, but luckily I still have some pictures to share.
Once upon a time, I found this wicked awesome banana bread recipe on All Recipes. It calls for cream cheese and eggs. I made it with vegan cream cheese for Thanksgiving last year without anyone knowing. But i’m kind of over fake cheese, so I wanted to make one just as good without it. And I wanted Brian to take some to the field with him so I wouldn’t eat them all, so I made muffins. I think i’m good with muffins because these came out pretty excellent on the first try. I think i’m going to add the recipe into the zine.
Sometimes, you don’t want to be healthy. Sometimes, you need grease. Pre-vegan, I invented this thing we call Mexican Egg Rolls. It’s not complicated, its basically taco filling in an egg roll wrapper, and fried. Brian was truly sad when he realized that I wouldn’t be making them anymore, so every now and then he just makes them for himself. Last month, I spotted wrappers in the freezer section (I can’t remember the exact name). They mentioned egg rolls on them. I checked the ingredients, no eggs! Yay! So we tried them out a few days ago. They’re thinner than standard egg roll wrappers, so they’re a little crispier. I made mine partially with seasoned soy crumbles, and with leftover tamale pie filling (which I didn’t take a picture of because it’s the same thing that I posted not too long ago).
You probably wouldn’t believe me after that last picture, but i’m desperately trying to get back on track with my weight loss. I hadn’t been counting my points for a month. I’ve been going up and down a pound or two around 145, and i’ve decided that I am going to be in the 130’s by the end of May, no excuses. None of my clothes from last summer fit. Nada. I still only have one pair of pants that fits completely right. So i’m trying to eat more raw vegetables to balance out things like Mexican Eggroll night.
I get some great light coming in through the kitchen window. A nice breeze, too. It actually makes doing the dishes less terrible. And speaking of my kitchen window, this is a picture I took of my newly planted garden from it. Everything needs to hurry up and grow so it doesn’t look so sparse.
