Vegan MoFo #5: Iron Chef time!
I am so excited for this week’s Iron Chef, because it is one of my favorite ingredients in the whole wide world. I’m also excited because I can’t wait to see what everyone comes up with.
If this is your first time playing, the rules are simple in that there aren’t really any rules. This is not a contest as there is no winner, but I will blog about it and pick some favorites, so you should still try your best! The entries are due by 2 pm CST on Sunday. After you make your entry, simply upload your photo, blog about it, and drop the link off at this post, and I will do the rest. Also, since the point is to be creative, you need to come up with your own dish and not just make one out of a cookbook, because that’s not much of a challenge.
And with that, the first secret ingedient is…
MASHED POTATOES!!!
Everyone (okay, almost everyone) loves mashed potatoes. And while it might seem like there isn’t much you can do with mashed potatoes besides maybe eat them and make Shepherd’s Pie or something, there is a lot. Hell, i’ve even made peppermint patties over leftover mashed potato!
Two things to keep in mind:
1. Any kind of potato goes. White, red, yukon gold, sweet, doesn’t matter.
2. This might go without saying, but no, you cannot just submit a bowl of mashed potatoes!

They make THE BEST mashed potatoes I’ve ever had. The flavor is really rich. Plus, they’re gorgeous!
