Vegan MoFo: Fun with leftovers.
Recently while my mother-in-law was visiting, I made Samosa filling (minus the dough because I was tired), and basmati rice with cumin seeds. I made a LOT. A ton. I didn’t mean to. But the problem with not following a recipe is that you don’t really realize how much you have until it’s too late. I think I only used six small yukon potatoes. Anyway, obviously I had leftovers. Two days in a row for lunch I had:

Samosa patties! I just mixed up the rest of the filling and rice, added a little flour so that I could shape it, and pan fried them in canola oil. I added in some okra because it was the first thing that I touched when I opened the freezer. The flour really cut down on the spiciness. I think I would like to try and make a recipe for this.
